Crispy, golden, fried spaghetti. Does it really get any better than that?! Have you ever had a special food that, for you, brings back memories and is just an all around comforting food to eat? I certainly have a few, but for me, this makes it in the top five for sure. I don’t make this often, not because it’s fried (well.. that lol) but because I like to look forward to having it. Makes sense? I’ve been eating these spaghetti patties for as long as I can remember. My mom in the kitchen, whipping these up, I remember watching her make them. Eggs, leftover cooked spaghetti, and seasonings swirling together….transferred to the oil in the pan that’s been heating up on the stove, and the instant sizzle as the spaghetti started to fry and transform into the crispy, salty, crunchy goodness that as a kid, made me feel like I was in food heaven.

It was the 70’s. Growing up in the 70’s, I ate a whole lot different than I do today, but when im feeling nostalgic, I whip up a batch, and instantly get transported. It all starts with….

A bowl of leftover spaghetti. Half a box of cooked spaghetti, drained and cooled. I didn’t have left over spaghetti, so I cooked some up earlier in the day and had set it aside in a bowl with a little bit of olive oil so it wouldn’t stick together.
A few eggs whisked together will be the binder for these spaghetti patties.
Pour the beaten eggs over the spaghetti, add some salt, pepper, and nutmeg. You can use ground nutmeg if you’d like or grate some fresh. I rarely use nutmeg, but I find that buying it whole and grating some as I need it keeps for a better shelf life and works best for me.
Heat some oil in a medium size skillet over medium heat. I’d say about half an inch of oil should do the trick. Once the oil is hot, use a fork to twirl the spaghetti and egg mixture and carefully place it in the hot oil in a mound-shape. Let it cook for about 3-4 minutes, and then flip it over to the other side. That golden color is what you’re looking for.
With a slotted spatula, transfer the patties to a paper towel lined plate. I like to sprinkle a little extra salt on top of them once they come out of the pan.

Recipe

Ingredients:

  • Half a box of cooked spaghetti, drained and cooled
  • 4 eggs beaten
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon ground or freshly grated nutmeg
  • Oil for frying

Directions:

Heat about half an inch of oil in a medium size skillet over medium heat. Place your spaghetti in a bowl big enough to stir and move it around in. Add the beaten eggs, salt, pepper, and nutmeg to the spaghetti. Mix it well, coating all of the spaghetti with the seasoned egg mixture. When the oil in the pan is hot, twirl some spaghetti and egg mixture onto a fork and place it in a mound in the pan. Let cook for about 3-4 minutes or until golden brown. Flip it over and let cook through. Another 3-4 minutes. With a slotted spatula, transfer the patties to a paper towel lined plate. Sprinkle a little bit of salt on top.

Viola! A simple spaghetti dish thats sure to be a hit with adults and kids alike! I hope you enjoy this recipe as much as I do!
