Roti, similar to Naan bread, is a middle eastern flat bread that is delicious, chewy and versatile. I’ve substituted my gluten free flour blend for the all purpose flour . Having made it both ways, I can tell you that they are both equally delicious! This chewy flat bread is the vehicle for a mild flavored smooth hummus made with chickpeas and seasoning and takes just a minute or two to whip up in your food processor. Slather it on the Roti and top with your favorite crunchy veggies for a delicious, healthy meal. It’s perfect for meatless Mondays, perfect for not eating meat during lent if your religious customs require, or if you are looking to add more plant based meals to your diet. Whatever the reason , I urge you to try it!

It all starts with the Roti dough. It comes together quick but needs about a half hour to rest before assembling it and cooking , so keep that in mind! However no love loss there, you can prep everything else during that time to make preparing and cooking go much faster!

combine flour,baking powder,salt, oil and water in a large bowl. Mix until a dough forms like this. Let it sit for about 30 minutes.
Then cut the dough into 8 pieces . Roll each piece into a ball. Roll each ball out on a floured surface to about a 1/4 ” thickness.
Heat a cast Iron skillet over medium heat. Lightly spray the skillet with cooking spray and place the flattened roti on the skillet and lightly spray the top of the roti .
Let it cook on this side until you see bubbles forming like this. Then flip over ……
Tada! Look how beautifully browned that looks! and those blackened spots…equals flavor baby!
Time for hummus! now you can take the 30 minute waiting time while the dough rests ,.. to read a book, watch tv, catch up on social media or stick to the task at hand and make this quick and easy hummus. 1 15 oz can of chickpeas, lemon juice, ground cumin,black pepper, salt, garlic powder and olive oil.
Combine all the above ingredients into a food processor and give a real good pulse. look how smooth and creamy that is.. velvety……
Hummus is done! light , mild and delicious! I’ve had store bought hummus before, and I find it to be a bit to aggressive in taste. That’s just my opinion. This hummus recipe is not over powering in any direction of flavor but you can definitely tailor it to you taste preference.
Veggie platter time! Here is where you can get creative still! I keep it simple by slicing up radishes, cucumbers, fresh spinach, and romain lettuce. I organize it in this fun sectioned chip platter. You can slice scallions, red peppers, tomatoes…the list goes on …. use you imagination !!
step 1. put the roti on your plate. 2. spread the hummus on the roti 3. top with your veggies and fold. step 4. eat & enjoy !

Roti recipe:

Ingredients:

  • 3 cups of all purpose flour or gluten free flour blend
  • 1 teaspoon of baking powder
  • 1Teaspoon of salt
  • 2 Tateblespoons vegetable oil or evoo
  • 1 Cup of water

Directions:

Place all the ingredients in a large bowl. Mix until it comes together. Press to form a dough. Flatten it out a bit. Let it rest on the counter for about 30 minutes. Then cut the dough into 8 pieces. roll each piece into a ball. Turn each piece out onto a floured surface and roll out to about 1/4 inch thickness. Place a cast Iron skillet on the stove over medium heat and spray lightly with cooking spray. Place the rolled out dough onto the skillet. 1 at a time,cook until you see bubbles forming on top. Flip and let cook for about another two minutes. Remove from skillet and place on a plate covered with paper towel or clean dish towel to keep warm while you cook the rest.

Note: Roti will stay good wrapped in foil in the fridge. To warm. place Roti in the oven or toaster/convection oven on bake 250 degrees for a few minutes until warm and flexible. They are great once cooked to top with sauce and cheese to make mini pizzas or even scrammble up some eggs and make a breakfast buritto! so many options with this delicious bread!

Hummus recipe:

Ingredients:

  • 1 15 oz can of chickpeas drained, reserving a 1/4 cup of the liquid
  • 1 Tablespoon of garlic powder
  • 1 Tablespoon of lemon juice
  • 1 Teaspoon ground cumin
  • 1/4 Teaspoon black pepper
  • 1/2 Teaspoon salt
  • 1 Tablespoon of extra virgin olive oil

Directions:

Place all ingredients in a food processor. Pulse to desired consistency. I like mine prettty smooth but you can certainly keep it less smooth keeping more texture.

veggie tray:

Sliced cucumbers, sliced radishes, shredded romain lettuce, rough chopped fresh spinach. you can use any veggies you like.

Time to plate! place a Roti on the plate. Spread desired amount of hummus on it, top with veggies. fold and enjoy!
