Avocados . A simple fruit. (Yes.. They are a fruit! part of the berry family , to be exact!) The flesh, a perfectly calming shade of green. Maybe that’s why I love them so much, green is my favorite color. In case you didn’t know. It’s more than that though. It’s silky , velvety , and the good for you fats that they provide , are part ownership as to why any dish they are in seem to take on a luxurious experience when eaten. Heavenly , in fact!

One of my favorite ways to eat avocados , is on toast. I’ve had them sliced, mashed, smashed ,you name it, but what I really go after when it come to avocado toast, is the play on textures. My avocado breakfast sandwich has toasted multigrain bread, seasoned smashed avocado, a perfectly cooked egg over easy, fresh spinach leaves and to top it all off….. wait for it….. wait for it…. Alfalfa sprouts! yes! It is healthy, delicious and sooo satisfying! It’s a perfect post workout meal, and I can say with confidence that this sandwich will leave you satisfied and full, without weighing you down.. perfect for those busy days when who knows when lunch is going to be. Me? I treated myself and my daughter to this perfectly delicious sandwich this past Sunday. We all slept late and woke up taking the day in a relaxed sort of way.

Ok, I think I’ve tortured you enough lol. Let’s get started!

Two slices of multigrain bread toasted up nice and golden please! I use gluten free bread , but you can use any bread you like. I just love the nutty texture this bread adds to this sandwich.. for me, most sandwiches really.
Next, I scoop out the flesh of 1 avocado and season it with salt, pepper, garlic powder, dried parsley and extra virgin olive oil. Fresh parsley would work well in this, so go ahead and use some if you have it on hand.
Take a fork and mash the avocado and seasonings. I like to mash it after I’ve added the seasonings. I feel they flavor up the avocado while I’m mashing and mixing. Incorporating all of that savory goodness, so if you like it on the chunky side, you wont be over mixing . Doing it this way gives you the opportunity to decide just how chunky or smooth you prefer your avocado to be.
Two lonely leaves of spinach i be… (ok maybe i shouldn’t be listening to the Beastie Boys while i write this post. lol) You can leave them whole, or give a rough chop. Totally up to you…..
Butter in the pan…you know what that means….eggs are joinning the fun! one lonely pat of butter I be , sitting in a cast iron skillet just me…….ok. I’ll stop…I just couldn’t resist ! lol
In the pan over medium/low heat , carefully crack an egg over the melted pat of butter. Take this moment to season your egg with salt and pepper to taste. A sandwich like this, thrives on seasoning the components as you go!

Let’s not forget about these beauties. Alfalfa sprouts! I adore them. I grew up eating them..I love adding them to egg salad sandwiches….and now they have a new sandwich I add them to.
Time to build the sandwich!! Spread a generous amount of avocado spread on both slices of toasted bread. Then add the spinach leaves, alfalfa sprouts, the perfectly cooked over easy egg, and then top with the other slice of bread. Cut the sandwich down the middle to reveal….

Recipe

Ingredients:

  • 2 slices of multigrain bread
  • 1 egg
  • 1 avocado
  • 1 small bunch of alfalfa sprouts
  • 2 spinach leaves
  • 1 pat of butter
  • 1 teaspoon of olive oil
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried parsley

Directions:

Toast the bread and set aside on a plate. Slice the avocado around from top to bottom. Give a gentle twist to open. remove the flesh from the inside with a spoon from both havles, discard the pit. Put the avocado in a bowl and add, the salt, pepper, garlic powder, parsley and olive oil . Mash the avocado and seasonings to your liking.Smooth or chunky, you decide. In a small pan over medium / low heat, melt the pat of butter. Carefully crack the egg into the pan . Try not to bust the yolk. Season with salt and pepper to taste. Cook for about 3 minutes and then carefully flip the egg over, cooking for another minute or two. Time to plate! spread a generous amount of avocado spread on both slices of toast. Top it with the spinach leaves, alfalfa sprouts, the egg and finally the last piece of toast. cut the sandwich and let the yolk run…..mmmmm deliciousness .

There you have it! A delicious, healthy , satisfying , avocado toast breakfast sandwich . Fueling your body and getting you ready to take on whatever the day may bring!
