Ice pops are so refreshing , especially in the summer. A great after dinner treat or a great way for the kids to cool off after a day of fun in the sun. Let’s face it, kids and adults alike can’t resist a cold sweet treat! These ice pops are sooo easy to make. Just three ingredients and a blender is all you need to make these fruity, flavorful gems.

Chopped fresh strawberries are the star of these ice pops. There’s nothing better than grabbing some fresh picked strawberries from your local farmers market. For me, the taste does not compare! It surpasses store bought and in doing so, more times than not, you won’t have to add as much sugar . Resulting in a naturally sweet healthier ice pop you can feel good about eating without the guilt !
In a blender add the chopped strawberries, water and sugar. This is the part where I feel like a scientist lol . I start out with a smaller amount of sugar and pulse and taste until I like the amount of sweetness. This recipe is so super quick, the only bulk of time is waiting for it to freeze , so if you are an early riser, i say get to it! have everything into molds and in the freezer and on about 6 hours.. you have ice pops!
Pour the liquid into ice pop molds and freeze. If you do not have ice pop molds, you can buy them at your local dollar store. They are very inexpensive. You can also pour the liquid into plastic quart take out containers and freeze. I’ve done that before too! you can easily take your ice out a few minutes before serving to make scraping it out easier .

Recipe

Ingredients:

  • 2 cups of chopped strawberries
  • 2 cups of water
  • 3/4 cup of sugar (you can start with 1/2 cup of sugar, blend and add more until you get your desired sweetness. Make sure to blend after each time you add more sugar)
  • ice pop molds, or take out quart container, glass dish

Directions:

Place chopped strawberries, water and sugar in a blender and bland until smooth, you can leave some chunks of strawberries if that’s your thing. Pour into molds or designated container. Place in freezer for at least 6 hours to overnight.

Note:

  • You may need to run molds under hot water for a minute or two to loosen the ice from the molds.
  • strawberries can be replaced with many different fruits. I’ve had the best success with :watermelon, mixed berries( blueberries, blackberries, raspberries, strawberries ) or individual berries. lemon juice in place of the cut fruit.
