Chicken salad has it’s place in my rotation of meals. Whether it’s for lunch on the weekend, or a quick weeknight meal accompanied by pickles, and a yummy fruit salad on the side. A few years back, I was grocery shopping and walked by the rotisserie chicken display and It hit me! No. Not the chicken , lol . The idea. Why not elevate the chicken salad experience for my family, by using …. you guessed it! rotisserie chicken. It’s perfectly cooked, warm, juicy and full of flavor. All I have to do is buy it, bring it home, and the main ingredient is already packed with flavor , waiting for me to transform it into a delicious, fresh chicken salad my family loves!!!
I’ve been making it this way ever since! Note: family members may slowly make their way to the counter hoping for a piece of that deliciously, warm rotisserie chicken as you are picking it apart and shredding it up. The aroma wafts through the air , and just like a cartoon…..they are mesmerized! ok. Maybe not exactly, but close. lol. This recipe is fast, easy and uses just a few ingredients.

Recipe
Ingredients:
- 1 small rotisserie chicken picked apart and diced up small or shredded
- 1/2 onion diced small
- 1 celery stalk diced small
- 1/3 cup of celery leaves chopped
- 3 scallions green and white part chopped thinly
- 1/4 cup fresh parsley minced or 1 tablespoon dried parsley
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 1/2 teaspoons of garlic powder
- 1 cup of mayo
Directions:
Pick apart a small rotisserie chicken. Dice small or shred and add to a large bowl. To the bowl add the chopped onion, celery stalk, celery leaves, scallions, parsley, salt, pepper and garlic powder. Stir to combine. Add the mayo and stir well to combine.
